Ingredients

  • 3 eggs
  • 1 cup pumpkin puree
  • 1 ¼ cups granulated sugar
  • ¾ cup neutral oil
  • 2 teaspoons vanilla extract
  • 1 tablespoon cinnamon
  • 2 teaspoons pumpkin pie spice (or 1 teaspoon ground ginger, 1 teaspoon allspice, and ½ teaspoon nutmeg)
  • ¾ teaspoon kosher salt
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 ½ cups [210 g] all-purpose flour
  • 1 ¼ cup semi sweet or bittersweet chocolate chips (or mini, if desired)

Instructions

  1. Preheat the oven to 350°F. Grease a 9 x 5 inch aluminum bread pan, then add parchment paper cut so that it fits the width and extends on both long sides, to easily remove the bread once its baked. 
  2. In a bowl, whisk the eggs. Then whisk in the pumpkin puree, sugar, oil, and vanilla.
  3. Whisk in the cinnamon, ginger, allspice, nutmeg, and kosher salt. Then whisk in the baking powder and baking soda. Sprinkle in the flour, half at a time, and mix with a spatula until just combined and there are no more dry bits (don’t over-stir). Fold in 1 cup of the chocolate chips. 
  4. Pour the batter into the bread pan and top with the remaining ¼ cup chocolate chips.
  5. Bake 60 to 65 minutes, until the top is set and a toothpick comes out with a few clinging crumbs. Allow to cool in the pan for 30 minutes, then run a knife around the edges and pull up on the parchment paper to remove the bread. Allow to cool to room temperature.
  6. Slice into pieces and serve. Stores for 4 days at room temperature wrapped in foil, 10 days in the refrigerator (bring to room temperature before serving), or freeze in slices for a few months.

Description

Here’s how to make a Sazerac, the official cocktail of New Orleans! Cognac, whiskey and absinthe make up this famous drink that tastes like no other.


Ingredients

  • 34 dashes Peychaud’s bitters
  • 1 sugar cube
  • 1 teaspoon absinthe
  • 1 ½ ounces (3 tablespoons) Cognac
  • 1 ounce (2 tablespoons) rye whiskey
  • Lemon twist

Instructions

  1. In a mixing glass, add the sugar cube and coat it with the bitters. Muddle the sugar cube with a cocktail muddler or wooden spoon until mostly dissolved. Add the Cognac, rye whiskey and absinthe and fill the mixing glass with a handful of ice.
  2. Stir until cold. Strain the drink into a chilled low ball glass.
  3. Use a knife to remove a 1″ wide strip of the lemon peel. Squeeze the lemon peel into the drink to release the oils. Gently run the peel around the edge of the glass, then place it in the glass and serve.

30 Easy Fall Desserts

Description

This apple dumplings recipe is truly the best! Tender, cinnamon-spiced apples are baked in a flaky pastry crust.


Ingredients

Crust

  • 2 cups all-purpose flour
  • 1 teaspoon kosher salt
  • ¼ teaspoon baking powder
  • ¾ cup unsalted butter*
  • ½ cup milk

Filling

  • 6 medium crisp tart apples 
  • 6 tablespoons granulated sugar 
  • 1 teaspoon cinnamon
  • ½ teaspoon allspice
  • ¼ teaspoon ginger
  • 3 tablespoons unsalted butter

Syrup

  • 2/3 cup brown sugar
  • ⅓ cup water
  • ¼ teaspoon cinnamon
  • 2 tablespoons unsalted butter

Instructions

  1. In a large bowl, mix the flour, salt, and baking powder. Cut in the butter with a pastry cutter or fork until a pebbly texture forms (with butter chunks about the size of peas). Add the milk and stir to combine, adding more milk by the tablespoon until the dough comes together (we usually add about 2 more tablespoons). Divide the dough into 6 equal balls (about 100 g each). Place in a covered container and refrigerate the dough for 30 to 60 minutes. 
  2. Preheat the oven to 350°F. 
  3. Peel the apples, then cut out the cores with a knife. Slice the apples into 1/8th thick rings width-wise, so the apple can stack after being cut (see the photos above). You can do this with an apple peeler-corer-slicer, or by hand. Check to make sure there are no extra seeds left inside the apple slices. 
  4. In a small bowl, mix the filling ingredients: granulated sugar, cinnamon, allspice, and ginger. Cut the 3-tablespoon piece of butter into 6 small stick shapes that fit inside the hole in the center of the apple. 
  5. Remove the dough from the fridge. Roll out one piece of dough wide enough to cover the apple when folded, about 8 inches in diameter. Place an apple in the center. Place 1 butter pat and 1 tablespoon of spiced sugar into the center of the apple. Wrap the dough up and around the apple from each side. Pinch the top gently to seal. Repeat for each dumpling, placing the finished dumplings in an ungreased 9 x 13” pan. 
  6. Bake the dumplings for 15 minutes. Meanwhile, make the syrup: bring the brown sugar, water, cinnamon and butter to a boil, stirring often, then remove from the heat. 
  7. After the first 15 minutes of bake time, spoon a few tablespoons of the syrup over each dumpling, using about half of the syrup. Bake for another 30 minutes, then spoon the remaining syrup over the dumplings. Bake for a final 15 minutes (to make a total of 1 hour bake time). Remove from the oven and allow to cool a few minutes before serving. Serve with vanilla ice cream.

This chewy chocolate chip cookie cake recipe is easy to make and a crowd pleasing dessert recipe! It’s the perfect treat for pitch ins and parties.


Ingredients

  • 1 ½ cups all purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 8 tablespoons unsalted butter, room temperature
  • ¼ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 tablespoon vanilla extract
  • 1 tablespoon milk
  • 1 large egg, room temperature
  • ½ teaspoon orange zest
  • ¾ cup best quality dark chocolate chips

Instructions

  1. Preheat the oven to 325 degrees Fahrenheit. Grease a 9-inch pie pan.
  2. Combine the flour, baking soda, and kosher salt in a bowl. Set aside.
  3. In the bowl of a stand mixer (or with an electric mixer), cream together the butter, granulated sugar, and brown sugar with paddle attachment for 2 to 3 minutes until fluffy. Add the vanilla, egg, milk, and orange zest and beat for 1 minute.
  4. With the mixer on low, add the flour mixture until just combined. Remove the bowl from the mixer and fold in ½ cup of the chocolate chips. Use a spatula to press down the dough into the pie pan. Top with the additional ¼ cup chocolate chips.
  5. Bake 25 to 27 minutes, until the edges are starting to brown and the center has fully firmed up. Cool several hours at room temperature before serving (the cookie cake is much too gooey to cut when it’s first baked, so the longer you can cool it the better!).

This classic pumpkin cake recipe is moist and perfectly spiced! Top with cream cheese frosting for an irresistible treat.


Ingredients

For the pumpkin cake

  • 2 cups all-purpose flour
  • 1 ½ tablespoons pumpkin pie spice (purchased or homemade)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • ¾ cup dark brown sugar
  • ¼ cup granulated sugar
  • 1 cup pumpkin puree
  • 2 large eggs
  • ⅓ cup neutral oil
  • ½ cup unsweetened applesauce

For the cream cheese frosting (optional)

  • 4 tablespoons unsalted butter, room temperature
  • 8 ounces cream cheese, room temperature
  • 2 cups powdered sugar, sifted
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Grease a 9 x 13″ or equivalent baking dish.
  2. In a large bowl, stir together the flour, pumpkin pie spice, baking soda, baking powder and kosher salt. In a separate bowl, whisk together the brown sugar, granulated sugar, pumpkin puree, eggs, oil and applesauce. Pour the wet mixture into the dry ingredients and stir until combined. Pour into the prepared pan and use a spatula to smooth into an even layer. 
  3. Bake 25 to 30 minutes, until a toothpick inserted in the center comes out clean. Allow to cool until for 30 minutes, then refrigerate about 15 minutes until it comes to room temperature. (Or allow to cool and refrigerate it, then frost before serving.) If desired, dust with powdered sugar before serving or proceed to the cream cheese frosting (recommended). 
  4. Meanwhile, make the cream cheese frosting: Beat the room temperature butter and cream cheese with a mixer on medium speed for 2 to 3 minutes until completely smooth. Reduce the speed to low, then add the vanilla. Slowly sift in the powdered sugar until thickened. Refrigerate the icing until frosting the cake.
  5. Spread the frosting on top of the cake to the desired thickness (you can use the entire batch or less if desired). Stores refrigerated for up to 3 to 4 days; bring to room temperature before serving. Freeze the completely cooled unfrosted cake tightly wrapped for up to 3 months.

This easy fruit crisp recipe can be used with any fruit! It has a crunchy topping of almond flour and oats, and the filling is perfectly sweetened. 


Ingredients

For the filling

  • 5 cups fresh berries or sliced summer fruit (blueberries, strawberries, raspberries, blackberries, sliced peaches, etc) 
  • 1 tablespoon vanilla extract
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons arrowroot powder or cornstarch
  • ¼ teaspoon kosher salt

For the topping

  • 5 tablespoons cold unsalted butter
  • 1 cup rolled oats
  • ½ cup coconut sugar or granulated sugar
  • ½ cup almond flour
  • 1 teaspoon vanilla extract
  • ½ teaspoon kosher salt

Instructions

  1. Preheat the oven to 350F. Lightly grease an 8-inch pie plate or a cast-iron skillet.
  2. Make the filling: In a large bowl, toss together the fruit, vanilla, lemon juice, arrowroot and salt until well coated. Transfer the filling to the prepared pie plate.
  3. Make the topping: Wipe out the bowl, then chop the butter into small pieces and add it to the bowl, with the oats, coconut sugar, almond flour, vanilla, and salt. Pinch it all together with your fingertips until it forms a shaggy, sandy dough. Sprinkle the topping evenly over the filling.
  4. Bake for about 45 minutes, or until the filling bubbles and the topping is golden brown. Allow to cool at least 15 minutes.

It’s so simple to roast, make into fries, and use for soups, salads and more!

But first, what is delicata squash? Delicata squash is an oblong winter squash that is creamy-white to yellow in color, with vibrant green and orange stripes. Delicata has edible skin, making it very easy to cook with no peeling required. The flavor is very sweet, with a rich, moist texture similar to a sweet potato. This type of squash has become popular in the past decade, and you can find it at many mainstream grocery stores and farmers markets.

The best delicata squash recipe? Fries! These will become a fast favorite, especially with the creamy sauce for dipping.


Ingredients

For the delicata squash fries

  • 2 pounds delicata squash (2 medium to large)*
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • Fresh ground black pepper

For the sauce

  • ½ cup sour cream
  • 2 tablespoons Mexican hot sauce (we like Cholula)
  • 1 teaspoon soy sauce or tamari
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon dried dill

Instructions

  1. Preheat the oven to 450°F.
  2. Wash the squash. Cut it in half lengthwise, then use a spoon to scoop out the seeds. Cut each half into 1/2-inch half-moon shaped slices.
  3. Place the slices in a bowl. Mix with the olive oil, kosher salt, and plenty of fresh ground black pepper.
  4. Line a baking sheet with parchment paper. Place the squash on the sheet in a single layer.
  5. Roast for 20 to 25 minutes until tender and slightly browned. Eat immediately. (Store leftovers refrigerated and reheat in a 400°F oven.)
  6. While the squash roasts, mix together the sauce ingredients. (Or substitute Lemon Tahini Sauce for a vegan or non-spicy option.)
  7. Serve squash warm from the oven with the sauce.

Pumpkin Bread Pudding

Description

This pumpkin bread pudding is the ideal Thanksgiving dessert! Drizzle the spiced pudding with bourbon butter sauce to take it over the top.


Ingredients

For the pumpkin bread pudding

  • 1 pound loaf sourdough or artisan bread (12 cups bread chunks)
  • 5 eggs
  • 2 cups whole milk
  • 1 cup pumpkin puree
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • ½ tablespoon vanilla extract
  • 1 ½ tablespoons pumpkin pie spice
  • 1 pinch salt

For the bourbon sauce

  • ½ cup granulated sugar
  • ¼ cup whole milk
  • ¼ cup salted butter
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Butter or grease a 9 x 13-inch baking dish.
  2. Cut or tear the bread into 1-inch squares. Place it in the baking dish and place in the preheating oven for 5 to 10 minutes until lightly dried but not browned.
  3. Meanwhile, whisk the eggs. Then whisk in the milk, pumpkin puree, brown sugar, granulated sugar, vanilla, pumpkin pie spice, and salt. Pour it over the bread in the pan and mix it with your hands until fully coated.
  4. Place in the oven and bake 45 to 50 minutes, until it is puffed and golden and you can no longer see standing liquid. Allow to cool for at least 15 minutes before serving. Make ahead: This recipe is great made ahead: make it day of and allow to sit at room temperature until serving, or make it 1 day in advance and refrigerate. If you’d like, you can crisp up the top by reheating it in a 350 degree oven until warmed.
  5. Make the bourbon sauce: Prior to serving, in a small saucepan, whisk together all bourbon sauce ingredients over medium heat. When it starts to simmer, simmer lightly bubbling for 3 minutes, maintaining the heat at medium to medium low so that it doesn’t bubble heavily. Once it turns golden brown at about 3 minutes, taste and make sure the flavor is caramelly with a hint of bourbon (the bite of the bourbon should be cooked out). Remove from the heat and strain it into a pitcher. Makes ¾ cup; make up to 3 days in advance, refrigerate, and warm over medium heat before serving.

What do the letters mean?

Cognac is a type of French brandy, a liquor made from distilling wine. There are several grades of Hennessy Cognac that designate how long it’s been aged:

  • VS or 3 stars (2 years)
  • VSOP (4 years)
  • Napoléon (6 years)
  • XO (10 years)

Watch out, bottles of XO can be upwards of $200! No need to go that high-end, of course. You can use a mid-priced VS or VSOP Cognac for all of the Hennessy cocktails above.

10 Great Hennessy Cocktails

Description

The best way to use this classy Cognac? Try this Hennessy Margarita recipe, full of flavor and sophistication.


Ingredients

  • 1 ½ ounces* tequila reposado
  • 1 ounce Hennessy Cognac
  • 1 ounce Cointreau (or Triple Sec)
  • ½ ounce lime juice
  • For the garnish: lime wedges

Instructions

  1. Cut a notch in a lime wedge, then run the lime around the rim of a glass. Dip the edge of the rim into a plate of salt (or for a festive look, use Margarita Salt).
  2. Place the tequila, Hennessy, Cointreau and lime juice in a cocktail shaker with 1 handful ice cubes and shake until cold.
  3. Strain the margarita into the glass with the salted rim. Fill the glass with ice and serve.

*To convert to tablespoons, 1 ounce = 2 tablespoons

Description

This strawberry margarita is cool, icy, tangy, and so refreshing! This fruity spin on the classic cocktail is an easy alcoholic drink using frozen berries.


Ingredients

  • 3 ounces (6 tablespoons) tequila*
  • 3 ounces (6 tablespoons) Cointreau
  • 2 ounces (4 tablespoons) fresh lime juice
  • 1 ½ cups frozen whole strawberries (fresh work too!)
  • 1 tablespoon simple syrup, agave syrup, or maple syrup
  • 1 cup ice

Instructions

  1. Cut a notch in a lime wedge, then run the lime around the rim of two glasses. Dip the edge of each rim into a plate of salt (or for a festive look, use our Margarita Salt).
  2. Place all ingredients in a blender. Blend until fully combined: you can blend until it’s an icy texture, or keep blending for a minute or so until it’s more liquid. Taste and add additional sweetener if desired. Pour into the glasses and serve.

*Easily doubles for 4 drinks (or triples, based on the size of your blender).
